Butternut Squash Soup

Butternut squash is an excellent source of vitamin A, vitamin C, vitamin E, thiamin, niacin, vitamin B-6, folate, pantothenic acid, magnesium, potassium, and manganese. This soup is full of flavor and will remind you of home.


  • 1 tbsp coconut oil
  • 2 shallots, thinly sliced
  • 2 cloves garlic, minced
  • 6 cups butternut squash, cubed
  • 1 1/2 tbsp cumin
  • 1/4 tbsp ground cinnamon
  • 1 can coconut milk
  • 2 cups vegetable broth
  • Optional: Pumpkin seeds


Heat a large pot over medium heat. Add oil, shallots, garlic. Saute for 2 minutes. Add butternut squash and season with salt, pepper, cumin, and ground cinnamon. Cook for 4 minutes. Add coconut milk and vegetable broth. Bring to a low boil over medium heat and then reduce heat to low, cover, and simmer for 15 minutes or until butternut squash is tender. Transfer soup to a blender and puree. Serve with pumpkin seeds.
