Black Bean Stuffed Sweet Potato

Sweet potatoes are sweet for your health and your taste buds! As one of nature’s best sources of beta-carotene, sweet potatoes are a standout antioxidant food. Several recent studies have shown the superior ability of sweet potatoes to raise our blood levels of vitamin A. In several studies from Africa, sweet potatoes were found to contain enough, on average, to meet 35% of all vitamin A needs.


  • ½ avocado
  • 1 cup black beans
  • 1 cup corn
  • 1 handful cilantro
  • ¼ tsp garlic powder
  • ½ red onion, diced
  • 2 sweet potatoes
  • ¼ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper


Poke holes in large sweet potatoes and wrap in foil. Bake in oven at 400 degrees for 45-50 minutes, or until flesh is soft. Combine black beans, cilantro, garlic powder, red onion, cumin, chili powder, and corn in a pot and cook over a medium heat for about 10 minutes, or until hot. Cut slits in sweet potatoes and spoon filling into each slit. Garnish with avocado, salt and pepper to taste. Serves 2.
