Black Bean Stuffed Sweet Potato

Sweet potatoes are sweet for your health and your taste buds! As one of nature’s best sources of beta-carotene, sweet potatoes are a standout antioxidant food. INGREDIENTS

  • ½ avocado
  • 1 cup black beans
  • 1 cup corn
  • 1 handful cilantro
  • ¼ tsp garlic powder
  • ½ red onion, diced
  • 2 sweet potatoes
  • ¼ tsp cumin
  • ½ tsp chili powder
  • Salt and pepper

PREPARATION

Poke holes in large sweet potatoes and wrap in foil. Bake in oven at 400 degrees for 45-50 minutes, or until flesh is soft. Combine black beans, cilantro, garlic powder, red onion, cumin, chili powder, and corn in a pot and cook over a medium heat for about 10 minutes, or until hot. Cut slits in sweet potatoes and spoon filling into each slit. Garnish with avocado, salt and pepper to taste. Serves 2.
