Simple and delicious. That’s what we like about this breakfast recipe. Avocados are are a source of good fats and tomatoes are packed with vitamin C to support the immune system.
- ½ avocado
- ½ cucumber
- ½ tomato
- Handful of sprouts or micro greens
- 1 slice, sprouted bread
- Olive oil
- Sea salt and pepper to taste
Slice cucumber, tomato, and avocado into thin slices. Cover sprouted bread with alfalfa sprouts and layer cucumber, tomato and avocado. Drizzle with olive oil and sprinkle salt and pepper to taste. Serves 1.
